
I’ve been loving cabbage this season. It is so easy to throw together, and is so refreshing. Plus, it feels good to know you are giving yourself something so purifying, even as it nourishes.
This simple recipe is made with a whole cabbage which, once tossed with salt and lime juice, shrinks way down. It serves 4, but it really, it’s hard not to eat it all yourself.


Crunchy Lime Cabbage
Inspired by the Teton Village Clubhouse and remembered by @myglobalpantry
Ingredients
1 green cabbage
1 lime
2 tablespoons sesame oil
1/4 cup sesame seeds
1/4 cup roasted salted peanuts, chopped
Pink salt, to taste
Option: Chives or scallions, finely chopped (I don’t add this, for summer it is too heating, but the original recipe calls for it, so I add for you to decide)
Option: Small handful mint
Instructions
Thinly slice the cabbage (removing the thick inner stem). Add two large pinches of salt and mix well. Grate lime zest into the bowl, then squeeze the juice of the lime and toss. Cover and allow the cabbage to sit at least 30 minutes.
Carefully pour out any juice that has accumulated at the bottom of the bowl. *The second time I made this I rinsed the cabbage as I found it too salty to just drain.
Stir in the oil, peanuts, sesame seeds. Salt to taste, and enjoy. If you are adding mint, tear into pieces and garnish.
